Mace is a very aromatic spice that relates to nutmeg but has more delicate flavour. In fact it is the dried "lacy" reddish covering or aril of the nutmeg seed. Mace is often preferred in light dishes for the bright orange, saffron-like hue it imparts. It can be used to flavor both sweet and savoury dishes. It goes well with fish, potatoes and vegetables. Try to use it in beef casseroles or bechamel sauce.
