Clove is a spice native to the Maluku islands in Indonesia. Verstegen has recently began a Fair Trade project on the islands to guarantee high quality and quantities as well as to support the local population. Clove has a characteristic flavor: fruity but spicy, piquant and peppery. Clove is used in mulled wine and beer drinks as well as in sweet dishes, stews, casseroles, with beef and pork.
